Amla Achaar/Indian Gooseberry Instant Pickle/vibsk–08

1. | Indian Gooseberry (Amla) | : | 500 g |
2. | Green Chillies | : | 200 g |
3 | Fresh Coriander Leaves | : | 1 small bunch |
4. | Garlic | : | 150 g |
5. | Asafoetida (Hing) | : | 4 tsp |
6. | Salt | : | 7-8 tsp |
7. | Red Chilli Powder | : | 5-6 tsp |
8. | Turmeric Powder | : | 4-5 tsp |
9. | Mustard Oil | : | 3-4 tbsp |
Method :
- Wash and par-boil Indian Gooseberries (amla) in 1/2 cup water on low flame. As soon as you see the cracks on gooseberry take it off the flame.
- Drain the water out.
- Deseed boiled gooseberries & keep aside.
- Wash the coriander and chillies and dry them with kitchen napkin. Cut the coriander & chillies coarsely. Keep aside.
- Chop the chillies & garlic coarsely in chopper.
- Take gooseberries in a bowl and mash it coarsely.
- Add turmeric powder, chilli powder, asafoetida, and salt. Mix well.
- Add chopped coriander leaves, chopped green chillies and chopped garlic. Mix well.
- Add raw mustard oil & mix well.
- Transfer the pickle in a clean, dry & air-tight glass jar.
- Do not throw the boiled water. Add black rock salt & black pepper powder in it & mix well. It’s a very healthy drink.
Note:
As there is no added preservatives keep the pickle jar in the refrigerator.Or make the pickle in small quantities so that it can be finished in week’s time. In refrigerator, it stays fresh for 2-3 weeks.
