Fluffy Egg With Focaccia Bread/vibsk-21

Ingredients:

Ingredients   Quantity
1. Focaccia Bread : 1 (can also take bread slices/pizza base)
2. Eggs : 5
3. Red Bell Pepper : ½  (cut in small equal cubes)
4. Yellow Bell Pepper : ½  (cut in small equal cubes)
5. Green Bell Pepper : ½  (cut in small equal cubes)
6. Onion : 1 big (finely chopped)
7. Green Chili : 2 (finely chopped)
8. Mushrooms : 5-6  (cut in small equal cubes)
9. Spring Onion : 2 (finely chopped)
10.  Tomato : 1 small  (cut in small equal cubes)
11. Red Chilli Powder : ½ tsp
12. Cheese Slices/Grated cheese : 3-4/ ½ bowl
13. Coriander : For garnishing
14. Black pepper powder : ¼ tsp (optional)
15. Salt : To taste
16. Ghee/Oil/Butter : 1 tbsp

Method:

  1. Chop all the veggies in small cubes and keep aside.
  2. Beat the Egg till foamy & keep aside.
  3. Roast focaccia bread & keep aside.
  4. Put the non-stick deep pan on low flame.
  5. Heat oil on medium flame oil and add chopped onions and green chillies. Sauté it and then add all the chopped veggies into the pan. Sauté on high flame.
  6. Add chopped tomatoes. Continuously stirring, cook on high flame.
  7. Add red chilli powder & salt. Mix well.
  8. Optional: Place cheese slices/grated cheese over the veggies.
  9. Bring down the flame to lowest. Add beaten eggs to the pan.
  10. Spread chopped spring onion over the beaten eggs.
  11. Place the focaccia bread on the eggs. Cover & cook on low flame.
  12. When egg is firm, place a plate on the pan. Flip it carefully & transfer bread & egg on the plate without breaking the egg.
  13. Transfer the bread-egg again to the pan (bread side down).
  14. Cover & cook till. Egg is firm & fluffy.
  15. When done, flip the pan and transfer all on the cover plate and then slide it onto the serving plate.
  16. Garnish with spring onions and black pepper powder and serve hot.

Note: Can use any other bread/pizza base also. Can also add peas and french beans.

Step-1

9. When egg is firm, place a plate on the pan. Flip it carefully & transfer bread & egg on the plate without breaking the egg. Transfer the bread-egg again to the pan (bread side down). Cover & cook till. Egg is firm & fluffy.

10. When done, flip the pan and transfer all on the cover plate and then slide it onto the serving plate.
