| 1. | Brinjal | : | 1 big (round one) |
| 2. | Garlic Paste | : | 2 tsp |
| 3. | Fresh Coriander Leaves | : | ½ small bowl |
| 4. | Coriander Powder | : | 2 tsp |
| 5. | Turmeric Powder | : | 1 & ½ tsp |
| 6. | Dry Mango Powder (Amchoor) | : | 1 tsp |
| 7. | Roasted Cumin Powder | : | 1 tsp |
| 8. | Red Chilli Powder | : | 1 tsp |
| 19. | Asafoetida (Hing) | : | ½ tsp |
| 10. | Black Gram Flour | : | 2 tsp |
| 11. | Salt | : | To Taste |
| 12. | Mustard Oil | : | 1 tbsp |
Method :
- Take black gram flour in a bowl, add coriander powder, turmeric powder, roasted cumin powder, dry mango powder, salt, asafoetida, red chilli powder, chopped coriander leaves & garlic paste. Mix well.
- Wash & dry the brinjal. Cut in thin round slices.
- Put the brinjal slices in the mixed masala & cover all the slices with masala.
- Keep aside for 10 minutes.
- Shallow fry the marinated brinjal slices.
Garnish with fresh coriander leaves. Serve hot as side dish with lunch/dinner or eat as a snack.
