Anda (Egg) Paratha/vibsk-11

 Ingredients:

1. Whole Wheat Flour : 250 g
2. Eggs : 3
3. Coriander Leaves : ¼ small bowl
4. Red Chilli Powder : ½tsp
5. Salt : To taste
6 Oil : For shallow fry

Method:

  1. Break eggs in a bowl and add finely chopped fresh coriander leaves, salt and red chilli powder.
  2. Beat the eggs thoroughly so that red chilli powder and salt are mixed evenly with eggs.
  3. Knead whole wheat flour & make smooth dough.
  4. Apply oil on the surface of rolling area. Take a small dough ball and fold it in a triangular shape. With rolling pin flatten it maintaining the triangle shape.
  5. Put the paratha on a heated griddle or non-stick tawa and cook on medium flame. Cook lightly on both the sides.
  6. Separate the two layers keeping the base end attached.
  7. Now, spread the egg on lower layer and cover it with upper layer.
  8. Apply oil on upper side of paratha. Cook for ½ minute this way. Egg will settle inside then flip slowly holding the open end.
  9. After flipping, apply oil on other side too. Keep the flame medium. Flip time to time till paratha is done from both side.

Serve hot with chutney/sauce and tea.
