Ingredients :

1. Colocasia Leaves (Arbi Patte) : 15 (for 3 bundles)
2. Black Lentil Skinned (Urad Daal) : 1 bowl
3 Black Gram Lentil Skinned (Chana Daal) : 1 bowl
4. Turmeric Powder : 1 & ½  tsp
5. Dry Mango Powder (Amchoor Powder) : 2 tsp
6. Red Chilli Powder : 2 tsp
7. Asafoetida (Hing) : 2 tsp
8. Coriander Powder : 3 tsp
9. Garam Masala : 1 tsp
10.  Salt : To taste
11. Ginger-Garlic Paste : 1 tsp (optional)
12. Mustard Oil : For deep frying

 

Method :

  1. Soak the lentils (daal) overnight.
  2. Strain and grind soaked lentils to coarse batter.
  3. Add turmeric powder, dry mango powder (aamchoor), garam masala, coriander powder, red chilli powder, asafoetida (hing), ginger-garlic paste (optional) and salt to batter. Mix well.
  4. Wash the Colocasia leaves and dry them.
  5. Place 1 leaf rib side up on the cutting board and apply batter all over the leaf (can place rib side down also).
  6. Place 2ndleaf on top of 1st Next place 3rd, 4th & 5th leaf.
  7. Now fold from both the sides and apply batter.
  8. Next fold it from up side and down side making it into a bundle.
  9. Make 2nd& 3rd bundles similarly, with rest of the 10 leaves.
  10. Boil the water in wok. Place a strainer on top of the wok. Apply oil inside strainer.
  11. Put the bundles in the strainer and cover it. Steam-cook for 55 mnts. First 10 minutes on high flame. Bring down the flame to medium and steam-cook for next 45 mnts.
  12. Put the flame to off and let the Saina/Patode cool down a little.
  13. Cut Patode in slices.
Steamed/Shallow Fried or Deep Fried, patode are tasty in all forms. Serve hot with chutney & tea.

Step-1
