Gatte Ki Sabzi/vibsk-72

1 | Gram Flour | : | 250 g |

9 | Asafoetida | : | 1 tsp |
10 | Garam Masala | : | 1 tsp |
11 | Coriander Powder | : | 2 tsp |
12 | Turmeric Powder | : | 1 tsp |
13 | Red Chilli Powder | : | 1 & 1/2 tsp |
14 | Baking Powder | : | 1 pinch |
15 | Cumin Seeds | : | 1 tsp |
16 | Oil for dough | : | 2-3 tsp |
17 | Oil | : | 3 tbsp |
METHOD:
- Add little water & grind onions, ginger, garlic, green chillies in a mixer to make smooth paste. Keep aside.
- Add salt, coriander powder, red chilli powder, baking powder, turmeric powder, garam masala, oil & curd to gram flour. Mix well.
- When mixed well, add water little by little & knead the flour to get the tight dough.
- Divide the dough in small equal balls. With your hands, roll the dough balls into cylindrical shape sticks. Cut them in 1/2″ pieces & keep aside.
- Boil water in a deep pan/wok. When bubbles starts coming up in boiling water, add dough pieces. Boil them for 8-10 minutes on medium high flame.
- Take them out of the water & keep aside. Do not throw the water.
- Heat the oil in a deep pan. Bring down the flame to medium. Add cumin seeds, bay leaves & stir. Add asafoetida & stir.
- Add onion-ginger-garlic-green chillies paste & roast. Stir.
- When roasted, add turmeric powder, coriander powder, red chilli powder & roast.
- When masala is roasted & gives out strong aroma, add churned curd little by little. Stir continuously to prevent curd from curdling.
- Keep stirring after adding each portion of curd. Roast till masala is separated from the oil.
- Now, add water that was kept aside. If needed, can add more plain water. Keep stirring. We have to keep the curry thin, as later on, the gatte will soak most of the curry. Keep the flame on medium & cook curry, stirring continuously till it comes to first boil.
- Add gatte to the curry. Then add garam masala & salt. Mix well. Cover & cook for 5 minutes on low flame.
Garnish with fresh coriander leaves & serve Gatte Ki Sabzi hot with Chapati/Paratha/ Bhakhri/Rice.
