Apple Pie/vibsk-71

1. | Apples | : | 2 kg (red & green apples: 1 kg each) |
2. | Semolina | : | 200 g |
3. | Cinnamon Powder | : | 1½ to 2 tsp |
4. | Almonds & Cashews | : | 50 g each |
5. | Clarified Ghee | : | 3-4 tbsp |
6. | Butter | : | 25-30 g |
7. | Sugar | : | 200-250 g |
8. | Pie Pastry Crust Dough | : | 2 balls of dough |
9. | Plastic Wrap | : | To wrap |
Method:
- In a wok, add clarified ghee & semolina. Roast well on medium flame.
- When roasted half way, add broken almonds, cashews and 1/2 tsp cinnamon powder. Roast on medium flame.
- When roasted completely & gives out the nutty aroma, take it off the flame. Add sugar & mix well. Keep aside.
- Peel & deseed the apples. Cut lengthwise in thin slices.
- When roasted semolina mix has cooled down, add half of the apple slices to it. Add ½ tsp cinnamon powder to roasted semolina. Mix well & keep aside.
- After keeping the pie pastry crust tin in refrigerator for 1 hour, take it out. Fill it with roasted semolina-apple mix.Roasted semolina soaks the apple juice while baking & adds extra lovely flavour to the Apple Pie.
- On the top of the roasted semolina mix, arrange the apple slices in a layer. Sprinkle ¼ tsp cinnamon powder & sugar over it.
- Arrange 1 more layer of apple slices & sprinkle ¼ tsp cinnamon powder & sugar over it. Cut the butter in chunks & place the chunks all over on the top.
- Roll the pastry crust dough. Cover the apple pie with this dough carefully.
- Seal the apple pie by pressing both, bottom & top crust together. Make the design of your choice on the edge by pressing the dough with your fingers.
- Preheat the oven at 180*C for 20 minutes. Give milk wash to the upper covering of the apple pie. Make slits with knife on top covering to release steam while baking.
- Place the apple pie tray inside the preheated oven & bake for 35 minutes at 180*C.
- Take it out of the oven after 35 minutes. Give 1 more milk wash on the top crust.
- To prevent the edge from burning, pack the outer edge of the apple pie with silver foil. Bake again for 10 minutes at 180*C.
Apple Pie is ready. It tastes yummm! Serve it hot or cold.
