Turnip Bharta (Mashed Turnip)/vibsk-46

 1. Turnips : 2 big size
 2. Tomatoes : 2 medium size
 3. Onions : 2 medium size
 4. Fresh Coriander Leaves : For garnish
 5. Green Chillies : 2
 6. Turmeric Powder : ½ tsp
 7. Garam Masala : 1 tsp
 8. Coriander Powder : 1 tsp
 9. Asafoetida : ½ tsp
10. Red Chilli Powder : 1 tsp
11. Mustard Seeds : ½ tsp
12. Cumin Seeds : ½ tsp
13. Ginger-Garlic Paste : 2 tsp
14. Salt : To taste
15. Oil : 1 tbsp

Method:

  1. Peel the turnips and cut them in big pieces.
  2. Add ¼ cup of water & boil the turnips in pressure cooker till 1 whistle.
  3. Heat the oil in a wok. Add mustard seeds, cumin seeds, green chillies and ginger-garlic paste. Roast.
  4. Add asafoetida and stir. Add coriander powder and garam masala. Stir and roast for ½ minute.
  5. Add onions and cook till onions are soft. Roast masala on medium flame.
  6. Mash the boiled turnip and keep aside.
  7. Onions are roasted, add turmeric powder. Stir.
  8. Add tomatoes. When tomatoes are soft and mushy, add mashed turnip. Mix well.
  9. Bring the flame to low. Add salt and mix well.
  10. Cover and cook on low flame for 10 minutes. Turnip Bharta is ready. Take it off the flame.
  11. Garnish with fresh coriander leaves.

Serve hot with Puri/Paratha/Chapati.
