Tricolor Sandwich/vibsk-23
Ingredients:

1. | Bread | : | 4 Slices |
2. | Carrot | : | 1 (grated) |
3. | Spinach | : | 10-12 leaves (blanched) |
4. | Mint Chutney | : | 4-5 tsp |
5. | Potatoes | : | 3-4 medium size boiled potatoes |
6. | Cheese Slices | : | 2 optional |
7. | Black Gram Flour | : | 2-3 tbsp |
8. | Carom Seeds | : | 1 & ½ tsp |
9. | Red Chilli Powder | : | ½ tsp |
10. | Salt | : | To taste |
11. | Oil/Ghee/Butter | : | 1 tbsp (for shallow frying). |
Note: To get orange and green colors, Saffron (orange) & edible colors can also be used.
Method:
Spinach-Mint Chutney:
Grind together spinach leaves & mint chutney together OR Grind together blanched spinach, mint leaves, 2 garlic cloves, 1 green chilli,1/2 tsp dry mango powder/4” piece of raw mango and salt, to fine paste.
Sandwich:
- Add carom seeds, salt and red chilli powder to black gram flour. Add water and make thick batter (pouring consistency) without any lumps. Keep it aside for 10 minutes.
- Then, mash the potatoes to make soft paste. Divide this paste in equal 3 portions.
- Add spinach-mint chutney to 1st portion. Add grated carrot with very little salt to 2nd portion. Leave 3rd portion plain.
- Spread, potato with spinach-mint chutney on 1st bread.
- Place 2nd bread on it and put 1 cheese slice on this bread slice.
- Over this cheese slice spread plain mashed potatoes.
- Now, place 2nd cheese slice on plain mashed potatoes. Cheese is optional, can put plain potato also.
- Place 3rd bread-slice and spread potato-carrot mix.
- Place the 4th bread on top. Now a big sandwich is ready, press the whole sandwich between your palms a little.
- Heat the oil (2tsp) in griddle/ non stick tawa.
- To fry the sandwich, hold the whole sandwich together and dip 1st side (brown side) in black gram batter, and place it on heated griddle. Hold it till the 1st side is fried. When fried till golden brown, dip the 2nd side in batter and fry the 2nd side. Repeat this with remaining 2 sides. When, the sandwich is fried from all 4 sides, apply the batter on top and bottom side (one by one) with the help of spoon, and cook till both sides turns golden brown.
- Now sandwich is packed and golden brown from all sides. Place this on serving plate and cut in two/four pieces as per your liking.
Serve it hot with tea, chutney & sauce of your choice.
