Tamarind–Ginger Powder Chutney/vibsk–03

1. | Tamarind | : | 50 g |
2. | Cumin Seeds | : | 1 tsp |
3. | Asafoetida (Hing) | : | ½ tsp |
4. | Red Chilli Powder | : | To Taste |
5. | Dried Ginger Powder | : | 3 – 4 tsp |
6. | Nigella Sativa/Black Caraway (Kalaunji) | : | 1 tsp |
7. | Jaggery | : | 250 gm |
8. | Salt | : | To Taste |
9. | Banana | : | 1 ripe (optional) |
10. | Raisins | : | (optional) |
Method:
- Soak tamarind in warm water for 2 hours.
- Mash the pulp and mix well with water.
- Separate pulp and seeds from tamarind liquid.
- Heat oil in a pan on medium flame.
- First, add cumin seeds in heated oil. Bring down the flame to low.
- Then add nigella, asafoetida and dried ginger powder. Stir to prevent from burning.
- Add tamarind liquid to pan and stir again.
- Add red chilli powder, salt and jaggery. Cook for 5 minutes on high flame.
- Stir time to time. As soon as solution reaches to boiling point, bring down the flame to minimum and cook chutney till thickens.
- If you like, then add ripe banana slices and raisins to chutney and cook for another 5 minutes on low flame.
Now tamarind – ginger powder chutney is ready to be served with various dishes.
