Stuffed Capsicum-1/vibsk-22
(Potato masala stuffing)
Ingredients:

1. | Green Bell Pepper | : | 4 |
2. | Boiled Potatoes | : | 4 medium size |
3. | Onions | : | 2 medium (finely chopped) |
4. | Green Chillies | : | 3 |
5. | Curry Leaves | : | 10-15 |
6. | Fresh Coriander Leaves | : | 1 small bunch (finely chopped) |
7. | Asafoetida | : | ½ tsp |
8. | Cumin Seeds | : | 1 tsp |
9. | Mustard Seeds | : | 1 tsp |
10. | Red Chilli Powder | : | 1 tsp |
11. | Turmeric Powder | : | 1 tsp |
12. | Carom Seeds | : | ½ tsp |
13. | Coriander Powder | : | 1 tsp |
14. | Garam Masala | : | ½ tsp |
15. | Dry Mango Powder | : | 1 ½ tsp |
16. | Salt | : | To taste |
17. | Ghee/Oil/Butter | : | 1 tbsp |
Method:
- Cut the stalk & remove all the seeds from all the capsicums. Keep aside.
- Mash boiled potatoes coarsely & keep aside.
- Heat oil in a pan & add mustard seeds.
- When it starts cracking add, cumin seeds, asafoetida, curry leaves & green chillies. Keep stirring.
- After few seconds, add finely chopped onions. Roast till onions are soft.
- Then, add turmeric powder, salt, carom seeds, garam masala, dry mango powder, coriander powder & red chilli powder. Mix well & roast for 1 minute.
- Add mashed potatoes & mix thoroughly with masala. Cook for 7-8 minutes on low flame.
- Stuffing is ready. Take it off the flame & add finely chopped fresh coriander leaves. Mix well & keep aside.
- Stuff all the bell peppers/capsicum with potato stuffing. Keep aside.
- Heat oil in a pan & bring down the flame to low.
- Shallow fry stuffed capsicums from all the sides on low flame.
- When all sides are done take it off the flame.
Serve hot as side dish with Lunch/Dinner.

Step-1
