Stuffed Bitter Gourd (Bharva Karele)-

1. | Bitter Gourd | : | 6-7 medium size |
2. | Raw Mango | : | 1 big (gratted) |
3. | Ginger-Garlic Paste | : | 4 tsp |
4. | Onions | : | 3 small size (finely chopped) |
5. | Red Chilli Powder | : | 2 tsp |
6. | Turmeric Powder | : | 1 ½ tsp |
7. | Coriander Powder | : | 3-4 tsp |
8. | Garam Masala | : | 1 ½ tsp |
9. | *Panch Phoran | : | 1 ½ tsp |
10. | Salt | : | To taste |
11. | Mustard Oil | : | 2 tbsp |
*Panch Phoran: Mix of Five Seeds- Nigella Seeds, Fennel Seeds, Fenugreek Seeds, Cumin Seeds & Mustard Seeds (in equal quantities).
Method:
- Peel the bitter gourds. Make a slit from top to bottom of the bitter gourd. Take out the pulp & seeds. Keep the peel & soft seeds aside. Discard the hard seed.
- Peel & grate the raw mango. Keep aside.
- Heat mustard oil in a wok on high flame.
- Put the flame to medium and fry the deseeded bitter gourd covers.
- Fry them till the skin is cooked.
- Take them out of the wok and keep aside.
- In the same oil add Panch-Phoran. When it starts cracking, add ginger-garlic paste & fry. Bring down the flame to low.
- Add coriander powder, garam masala, red chilli powder & turmeric powder. Stir.
- When all the spices are roasted and mixed well with ginger-garlic paste, add finely chopped onions. Stir & cook for a minute on medium flame.
- Bring down the flame to low & cook till onions are soft.
- Add bitter gourd peel, soft seeds & grated raw mango.
- Add salt & mix well. Cover & cook for 10 minutes on low flame.
- When stuffing is ready, take it out in a bowl.
- Fill the stuffing inside the fried bitter gourd covers.
Serve hot with Lunch/Dinner.
