Potato Fritters For Fasting (Vrat: Singhara-Aloo Pakode)/vibsk-37

1. Boiled Potatoes : 2-3 medium size
2. Water Chestnut Flour : 1 small bowl
3. Roasted Cumin Powder : ½ tsp
4. Rock Salt (Sendha Namak) : To taste
5. Fresh Coriander Leaves : 2 tsp
6. Groundnut Oil : For deep frying

Method:

  1. Add fresh coriander leaves, roasted cumin seeds, rock salt (sendha namak) to water-chestnut flour (singhad atta) and mix well.
  2. Now, add water little by little to this mix and make thick batter. Keep aside for 10 minutes.
  3. Cut the boiled potatoes in cubes and keep aside.
  4. Heat the oil in wok on high flame. Then bring down the flame to medium.
  5. Dip the potatoes in the batter and fry on medium flame.
  6. Stir and fry fritters from all sides. Fry till golden brown and crispy.

Serve hot with fresh coriander-mint chutney (vrat).
