PIE CRUST/PASTRY/vibsk-70

 Ingredients:

1. All Purpose Flour : 400 g
2. Granulated Sugar : 35 g (1½ tbsp)
3. Cinnamon Powder : 2 ½ tsp
3. Salt : 1 tsp
4. Unsalted Butter (ice cold) : 300 g (cut in small chunks)
5. Ice Cold water/Ice cold Milk : ¼ Cup
6. Plastic Wrap : To wrap dough

Method:

  1. Add Sugar & salt to all-purpose flour. Mix well.
  2. Add butter chunks (ice cold the butter for 10 minutes before adding to flour).
  3. Mix till little coarse mixture. If there are still small clumps of butter, it is ok.
  4. Add ice cold water little at a time to bind the flour (not like dough). The flour should be crumbly & when pressed should stick together.
  5. Bring together the mixture & divide it in 2 equal parts.
  6. Make 2 balls pressing between your palms.
  7. Take a plastic wrap & place the ball in center. Press the ball with your hand & make a small circle (disc) for the pie. Wrap it in plastic wrap. Repeat the process with 2nd
  8. Refrigerate the discs. For 1 hours.
  9. Apply butter & place a baking/butter paper inside the pie-baking tray.

Three Ways to Roll the Pastry Crust:

a). By dusting flour on the surface & on dough:

  • Dust the rolling surface & rolling pin with flour & place the dough disc on rolling surface.
  • Start rolling inside circle to out. Rolling evenly to make a circle as big as the pie pan. First one (base) will be bigger than the 2nd (top covering).
  • Keep dusting the surface & pie while rolling whenever needed.
  • To take the pie base off the rolling surface, loosely roll it up around the rolling pin & roll out on the pie pan.
  • Adjust the pie base inside rim of pie pan.
  • Remove the excess pastry outside the pie pan edge.

b). By rolling the dough between 2 sheets of butter paper/plastic wrap:

  • Place the disc between the butter paper sheets.
  • Start rolling inside circle to out. Rolling evenly to make a circle as big as the pie pan. First one (base) will be bigger than the 2nd (top covering).
  • Place the pie-tray upside down on the rolled pie & turn it upside carefully.
  • Remove the butter paper.

c). Giving shape by Hand:

  • Place the dough-disc inside the pie-tray.
  • Spread the dough evenly inside the tray from center to out, with fingers & palm.
  • Spread the dough till the rim of the tray.
  1. Cover the pie pastry with plastic wrap & chill it in refrigerator for 1-2 hours.
  2. After 1 hour take it out of the refrigerator & stuff the pastry crust with the stuffing of your choice.

This pastry crust can be used to make sweet OR savory pies like… Apple Pie, Strawberry Pie, Chicken Pie, Vegetable Pie etc.
