Mooli Ke Chande (Radish Pickle)/vibsk–17

Ingredients :

1. | Radish | : | 2 |
2. | Mustard Oil | : | 3 tsp |
3. | Asafoetida | : | 1 tsp |
4. | Turmeric Powder | : | ½ tsp |
5. | *Panch Phoran | : | 1 tsp |
6. | Rai (Small Mustard Seeds) | : | 1 tsp |
7. | Red Chilli Powder | : | 1 tsp |
8. | Salt | : | To Taste |
*Paanch Phoran: Nigella Seeds+Fennel Seeds+Fenugreek Seeds+Cumin Seeds+Mustard Seeds. All seeds taken in equal quantity.
Method :
- Wash & peel radishes.
- Cut them in round thin slices. Keep aside.
- Warm (not heat) mustard oil in a wok/pan.
- Add panch-phoran to pan. Then add asafoetida.
- After few seconds, add round slices of radish. Stir & mix well.
- Add turmeric powder & red chilli powder & mix well.
- Cook on low flame for just 1-2 minutes. Then take the wok off the flame.
- Crush the Rai (small mustard seeds used for pickles).
- When it cools down completely, then add salt & crushed rai. Mix well.
- Transfer it to clean, dry & airtight jar.
- Since there is no preservative added, make it in small quantity & keep in refrigerator.
Serve Mooli Chanda Pickle with Lunch/Dinner or with Parathas.
