Modak/Authentic Maharashtrian Style Modak/vibsk-26

Ingredients:

Ingredients   Quantity
1. Rice Flour : 150 g
2. Raw Coconut : 50 g (Grated)
3. Jaggery : 50 g
4. Green Cardamom Powder : ½ tsp
5. Salt : ½ tsp
6. Clarified Oil : ½ tsp

 

Note: To make soft modaks, prepare the rice flour as mentioned below:

Wash the unpolished and thick rice. Spread rice on cloth for drying (drying may take 3-4 days). With this rice, make flour for modaks.

Method:

  1. Grate the raw coconut finely.
  2. Take a wok and add grated coconut, jaggery and very little clarified oil to it.
  3. Put the wok on medium flame and cook coconut and jaggery. When mixture turns light brown, add green cardamom powder to it.
  4. Now, cook till all the moisture is evaporated and the mixture turns brown. Take it off the flame and let it cool.
  5. Take 2 glasses of water in a deep pan. Add salt. Mix. When water starts boiling, bring down the flame to lowest. Add rice flour to it and mix well.
  6. Take care that lumps are not formed. When mixed well, cover and cook for 2-3 minutes on low flame. (If you feel that added water is less, then add, only boiled and warm water to rice flour while cooking)
  7. Boil water for kneading the flour. Water should be more than lukewarm.
  8. After taking cooked rice-flour off the flame. Knead the cooked rice-flour before it is cold.
  9. Add water little by little and knead by pressing your palm on it. Be careful, as both, cooked rice flour and water are hot. Knead till the dough becomes soft.
  10. Take a small dough ball from the rice-dough and roll it between your palms to make a soft ball. Make a dent on it with finger and apply very little oil in the dent. Now, make small bowl like shape and make pleats on the edge.
  11. Put ½ tsp stuffing in this pleated bowl and close it. Prepare all the modaks like this.
  12. Boil water in a deep pan. Apply oil in the steel sieve and place it on the top of the pan. Put modaks on the sieve. Cover it and steam cook on high flame for five minutes. Put flame to low and cook for 5 more minutes.

Modaks are ready. Serve warm or cold, both ways it tastes good.

10. Boil water in a deep pan. Apply oil in the steel sieve and place it on the top of the pan. Put modaks on the sieve. Cover it and steam cook on high flame for five minutes. Put flame to low and cook for 5 more minutes.

11. Modaks are ready. Serve warm or cold, both ways it tastes good.
