Ingredients :

1. Whole Wheat Flour : 250 g
2. Salt : ½ tsp
3. Water to knead the dough : ½ glass
4. Oil to glaze : 1-2 tsp

 Ingredients for Stuffing:

  Ingredients:   Quantity:
1. Cucumber : 1 big size
2. Tomatoes : 1
3. Onions : 1
4. Green Chillies : 2
5. Ginger : ½” peice
6. Fresh Coriander Leaves : ½ bowl
7. Red Chilli Powder : ½ tsp
8. Salt : To taste
9. Oil : 3-4 tsp

 Method :

Stuffing for Kheera (Cucumber) Paratha:

  1. Grate cucumber, tomato and squeeze excess juice out from the grated mixture. Don’t throw this juice. Use it to knead the dough.
  2. Chop the onion, chillis and fresh coriander finely and add to tomato cucumber mixture. Add salt to taste. Mix well.

Recipe: For paratha base:

  1. Take whole-wheat flour and add ¼ tsp salt and 2 tsp ghee.
  2. Add little salt & red chilli powder to the juice (from tomato and cucumber) and knead the flour with it. If needed add more water to make soft dough.
  3. Cover and keep aside for 20 minutes.

Stuffing and Frying:

  1. Make six equal balls from the dough.
  2. With roller pin, make a chapati of around 5-6 inch in circle.
  3. On half side of chapati place the stuffing and spread it evenly.
  4. Fold the other half on the stuffing. (Taco like shape)
  5. Press and seal the top and bottom layers together.
  6. Heat the flat thick pan/griddle on medium flame. Placethe stuffed Paratha on the heated flat thick pan/griddle.
  7. Partly cook it and then flip it so that other side is also cooked.
  8. When both sides are cooked, brush the ghee on one side and cook it on low flame.
  9. Cook till golden brown on both the sides.
  10. Hold Paratha with the help of tong & fry the rib side also.

Serve hot with Yogurt/Mango Pickle/Butter/Mint Chutney.
