Eggless Vanilla Muffins with Tutti Frutti & Chocochips/vibsk-69

1. | All Purpose Flour | : | 450 g |
2. | Powdered Sugar | : | 400 g |
3. | Butter | : | 350 g |
4. | Curd | : | 2 tbsp |
5. | Vanilla Extract | : | 2 tsp |
6. | Baking Soda | : | ¼ tsp |
7. | Baking Powder | : | 1 tsp |
8. | Salt | : | 1/2 tsp (if using no salt butter) |
9. | Milk | : | 350 ml (slightly warm) |
10. | Chocochips | : | 3 tbsp |
11. | Tutti-Frutti | : | 2 tbsp each colour |
Method:
- In a bowl add milk, curd, vanilla extract, butter & powdered sugar. Butter will melt, as the milk is slightly warm. Mix well & keep aside.
- Add baking soda & baking powder to all-purpose flour. Sieve 2-3 times OR mix well in a food processor.
- Now, both the wet & dry ingredients mixes are ready. Add dry mix little by little to the wet mix & fold (do not whisk, just fold). Fold the dry mix very well in the wet mix. Avoid the lump formations during mixing.
- Muffin batter is ready. Please note, batter needs to be thick in consistency.
- Divide the batter in 2 bowls. Add chocochips in one bowl & mix well. Keep aside.
- Add tutti frutti in other bowl. Mix well & keep aside.
- Fill the batter in muffin baking cups. Shake the cups gently so that batter settles properly inside the cups.
- Add few chocochips on top of the chocochip muffin baking cups. And, add tutti-frutti on top of the tutti-frutti muffin baking cups.
- With the help of a pointed object, press down the chocochips & tutti-frutti in the batter.
- Preheat the oven at 180*C for 10 minutes. Put the baking tray inside the oven & set the temperature at 180*C & set the time for 30-35 minutes.
- After 30 minutes do the toothpick test. Insert a toothpick deep inside the muffin. If it comes out clean, it means muffins are ready.Take them out of the oven.
These home-made muffins are kid’s favourite. You can give them in snack box once in a while.
