Egg Delight/vibsk-30

Ingredients:

  1. Boiled Eggs : 4
  2. Green Chillies : 3-4 (finely chopped)
  3. Onions : 2 medium size (finely chopped)
  4. Bell Peppers: Red, Green and Yellow : 1 each small size (cut in 1”cubes)
  5. Tomatoes : 2 small size (cut in 1”cube)
  6. Mushrooms : 5-6 (cut in small pieces)
  7. Fresh Coriander Leaves : 1 small bunch (finely chopped)
  8. Spring Onions : 2 (finely chopped)
  9. Turmeric Powder : ½ tsp
10. Red Chilli Powder : 1tsp
11. Salt : To taste
12. Oil : 1 ½ tbsp

Method:

  1. Heat oil in a pan and add finely chopped onions to it.
  2. When onions turn soft, add green chillies, turmeric powder, salt and red chilli powder and stir.
  3. Once onions and spices roasted, bring flame to high and add mushrooms to the pan, stir, add bell peppers.
  4. To keep vegetables crispy, cook on high flame without cover and stir continuously.
  5. After cooking for 3-4 minutes add spring onions to pan.
  6. Save some spring onions for garnishing.
  7. After 2 minutes, add tomatoes and cook on high flame. Keep stirring.
  8. Add boiled eggs to pan and cook for 4-5 minutes.
  9. Put the flame off and garnish with spring onions and coriander leaves.

Cut the eggs in halves or 4 pieces. Serve hot.
