Egg Delight/vibsk-30

1. | Boiled Eggs | : | 4 |
2. | Green Chillies | : | 3-4 (finely chopped) |
3. | Onions | : | 2 medium size (finely chopped) |
4. | Bell Peppers: Red, Green and Yellow | : | 1 each small size (cut in 1”cubes) |
5. | Tomatoes | : | 2 small size (cut in 1”cube) |
6. | Mushrooms | : | 5-6 (cut in small pieces) |
7. | Fresh Coriander Leaves | : | 1 small bunch (finely chopped) |
8. | Spring Onions | : | 2 (finely chopped) |
9. | Turmeric Powder | : | ½ tsp |
10. | Red Chilli Powder | : | 1tsp |
11. | Salt | : | To taste |
12. | Oil | : | 1 ½ tbsp |
Method:
- Heat oil in a pan and add finely chopped onions to it.
- When onions turn soft, add green chillies, turmeric powder, salt and red chilli powder and stir.
- Once onions and spices roasted, bring flame to high and add mushrooms to the pan, stir, add bell peppers.
- To keep vegetables crispy, cook on high flame without cover and stir continuously.
- After cooking for 3-4 minutes add spring onions to pan.
- Save some spring onions for garnishing.
- After 2 minutes, add tomatoes and cook on high flame. Keep stirring.
- Add boiled eggs to pan and cook for 4-5 minutes.
- Put the flame off and garnish with spring onions and coriander leaves.
Cut the eggs in halves or 4 pieces. Serve hot.
