Curd Rice/vibsk-16

Ingredients :

| 1. | Rice | : | 150 g |
| 2. | Curd | : | 200 g |
| 3. | Cucumber | : | 1 |
| 4. | Tomato | : | 1 |
| 5. | Pomegranate Pearls | : | 2 tbsp |
| 6. | Round Boriya Mirch (Chilli) | : | 4-5 |
| 7. | Mustard Seeds | : | 1 tsp |
| 8. | Red Chilli Powder | : | ¼ tsp (optional) |
| 9. | Coriander Leaves | : | For garnishing |
| 10. | Curry Leaves | : | 10-12 |
| 11. | Salt | : | To Taste |
| 12. | Oil | : | 1 tbsp |
Method :
- Steam-cook rice & keep aside.
- Chop tomato, cucumber & fresh coriander. Keep aside.
- Beat the curd & mix it with rice.
- Add chopped cucumber & tomatoes.
- Add pomegranate pearls & coriander leaves. Mix thoroughly.
- Add red chilli powder (optional) if you like spicy.
- Add salt to taste. Mix well.
- Heat oil in a tempering pan. Add mustard seed.
- When mustard seeds starts spluttering add curry leaves.
- Add boriya chillies (red-round one) to tempering pan.
- When boriya chillies are fried, pour this tempering on the curd rice & mix well.
- Curd rice is ready.
Serve hot or cold, Curd Rice is yummm. Serve with papad & pickle.
