1. | Bread | : | 8 |
2. | Boiled Potatoes | : | 5-6 |
3. | Onions | : | 2 medium |
4. | Green Chillies | : | 2 |
5. | Coriander Leaves | : | A small bunch |
6. | Curry Leaves | : | 10-12 |
7. | Oil | : | 2 tbsp for tempering |
8. | Red Chilli Powder | : | 1 tsp |
9. | Turmeric Powder | : | ½ tsp |
10. | Roasted Coriander Powder | : | ½ tsp |
11 | Cumin Seeds | : | 1 tsp |
12. | Salt | : | To Taste |
13. | Oil | : | For deep frying |
Method :
- Boil the potatoes. Peel and mash coarsely. Keep aside.
- Chop the onion and chilli finely.
- Heat the oil in a pan and add cumin seeds.
- When cumin start to splutter add curry leaves.
- Add chopped onion and sauté till translucent.
- Add green chillies.
- Put turmeric and red chilli powder & coriander powder. Stir for few seconds.
- Then add coarsely mashed potatoes. Add salt. Mix well with the tempering.
- Take the pan off the flame and add coriander leaves to the potatoes. Let it cool.
- Put the deep frying pan on the flame and heat the oil.
- When the oil is hot, bring the flame to medium.
- Dip the bread slice in water and squeeze out the water by pressing the bread between both your palms.
- Now put 1½ spoon potato stuffing in the middle of the bread slice.
- Cover the stuffing by folding outer sides of the bread and gently squeezing and folding the bread. Roll it between your palms till the stuffing is sealed inside completely.
- Take care that bread should cover the stuffing thoroughly, otherwise while frying, the potato stuffing will come out and spoil the oil.
- Keep ready 2-3 rolls.
- Gently slide the roll in the heated oil. Fry on medium flame till golden brown.
Serve hot Bread Rolls with pudina chutney (mint dip) and tomato sauce. On a rainy day, if you get the ‘ginger tea’ with it… nothing like it.
