1. Peel the bitter gourds. Make a slit from top to bottom of the bitter gourd. Take out the pulp & seeds. Keep the peel & soft seeds aside. Discard the hard seed.

2. Peel & grate the raw mango. Keep aside.

3. Heat mustard oil in a wok on high flame.
Step-4
4. Put the flame to medium and fry the deseeded bitter gourd covers.

5. Fry them till the skin is cooked.
Step-6
6. Take them out of the wok and keep aside.
Step-7
7. In the same oil add Panch-Phoran. When it starts cracking, add ginger-garlic paste & fry. Bring down the flame to low.
