Recipe Step By Step With Pics:

Step-1

1. Peel the bitter gourds. Make a slit from top to bottom of the bitter gourd. Take out the pulp & seeds. Keep the peel & soft seeds aside. Discard the hard seed.

2. Peel & grate the raw mango. Keep aside.

Step-3

3. Heat mustard oil in a wok on high flame.

Step-4

4. Put the flame to medium and fry the deseeded bitter gourd covers.

Step-5

5. Fry them till the skin is cooked.

Step-6

6. Take them out of the wok and keep aside.

Step-7

7. In the same oil add Panch-Phoran. When it starts cracking, add ginger-garlic paste & fry. Bring down the flame to low.

Step-8

8. Add coriander powder, garam masala, red chilli powder & turmeric powder. Stir.

Step-9

9. When all the spices are roasted and mixed well with ginger-garlic paste, add finely chopped onions. Stir & cook for a minute on medium flame.

Step-10

10. Bring down the flame to low & cook till onions are soft.

Step-11

11. Add bitter gourd peel, soft seeds & grated raw mango.

Step-12

12. Add salt & mix well. Cover & cook for 10 minutes on low flame.

Step-13

13. When stuffing is ready, take it out in a bowl.

Step-14

14. Fill the stuffing inside the fried bitter gourd covers.

Serve hot with Lunch/Dinner.
