Potato-Peanut Salad for Fasting/vibsk-39

Ingredients:

1. Boiled Potatoes : 3-4 (cut in cubes)
2. Fresh Coriander Leaves : 1 small bowl
3. Grated Coconut : 1 small bowl
4. Rock Salt (sendha namak) : To taste
5. Green Chillies : 1 (finely chopped)
6. Roasted Cumin Powder : ¼ tsp
7. Groundnuts : 1 tbsp (soaked)
8. Groundnut Oil : 1 tsp
9. Lemon : ½ (optional)

Method:

  1. In a big bowl put pieces of boiled potatoes, finely chopped coriander leaves, grated coconut, rock salt, finely chopped green chillies, roasted cumin powder, soaked groundnuts and groundnut oil and mix well.
  2. Squeeze ½ lemon and mix well.
  3. Potato-Peanut salad is ready.

Serve in Fasting.
