Mooli Ke Chande (Radish Pickle)/vibsk–17

Ingredients :

1. Radish : 2
2. Mustard Oil : 3 tsp
3. Asafoetida : 1 tsp
4. Turmeric Powder : ½ tsp
5. *Panch Phoran : 1 tsp
6. Rai (Small Mustard Seeds) : 1 tsp
7. Red Chilli Powder : 1 tsp
8. Salt : To Taste

*Paanch Phoran: Nigella Seeds+Fennel Seeds+Fenugreek Seeds+Cumin Seeds+Mustard Seeds.  All seeds taken in equal quantity.

Method :

  1. Wash & peel radishes.
  2. Cut them in round thin slices. Keep aside.
  3. Warm (not heat) mustard oil in a wok/pan.
  4. Add panch-phoran to pan. Then add asafoetida.
  5. After few seconds, add round slices of radish. Stir & mix well.
  6. Add turmeric powder & red chilli powder & mix well.
  7. Cook on low flame for just 1-2 minutes. Then take the wok off the flame.
  8. Crush the Rai (small mustard seeds used for pickles).
  9. When it cools down completely, then add salt & crushed rai. Mix well.
  10. Transfer it to clean, dry & airtight jar.
  11. Since there is no preservative added, make it in small quantity & keep in refrigerator.

Serve Mooli Chanda Pickle with Lunch/Dinner or with Parathas.
