Begun Bhaja/Brinjal Fry/vibsk–13

Ingredients :

1. Brinjal : 1 big (round one)
2. Garlic Paste : 2 tsp
3. Fresh Coriander Leaves : ½ small bowl
4. Coriander Powder : 2 tsp
5. Turmeric Powder : 1 & ½ tsp
6. Dry Mango Powder (Amchoor) : 1 tsp
7. Roasted Cumin Powder : 1 tsp
8. Red Chilli Powder : 1 tsp
19. Asafoetida (Hing) : ½  tsp
10. Black Gram Flour : 2 tsp
11. Salt : To Taste
12. Mustard Oil : 1 tbsp

 Method :

  1. Take black gram flour in a bowl, add coriander powder, turmeric powder, roasted cumin powder, dry mango powder, salt, asafoetida, red chilli powder, chopped coriander leaves & garlic paste. Mix well.
  2. Wash & dry the brinjal. Cut in thin round slices.
  3. Put the brinjal slices in the mixed masala & cover all the slices with masala.
  4. Keep aside for 10 minutes.
  5. Shallow fry the marinated brinjal slices.

Garnish with fresh coriander leaves. Serve hot as side dish with lunch/dinner or eat as a snack.

Step-1
